I recently discovered the tasty chicken artichoke soup at Whole Foods and simply couldn’t get enough of it. But, that version is high in sodium AND it’s not very budget friendly. So of course I decided to create my own version! Mine doesn’t taste exactly like the Whole Foods version, but I actually like it better. It is deliciously satisfying and simple to make.
1 tablespoon extra virgin olive oil
1 medium onion, chopped
2 garlic cloves, minced
1 medium yellow bell pepper, diced
2 celery stalks, chopped
3/4 cup carrots, diced
2 chicken breasts, cooked and diced
2 tablespoons fresh lemon juice
1 cup of kale, chopped
1 8oz. can artichoke hearts, coarsely chopped
5 cups reduced sodium chicken broth
1/2 teaspoon sea salt
1 teaspoon oregano
1 teaspoon smoked paprika
1 teaspoon red pepper flakes
1 teaspoon pepper
Instructions
Heat olive oil in a large pot. Add the onion, celery, yellow bell pepper, carrots and garlic. Sauté for 6-7 minutes.
Add kale and sauté another 2 minutes.
Next, add the broth, lemon juice, artichoke hearts, chicken and all the seasonings. Lower heat and simmer for 15 minutes. Serve with a salad and warm bread or crackers.

That looks very yummy….I make it with green onions, chopped frozen artichokes, chicken broth, shitake mushrooms, parsley and lots of wild rice and chicken. It is my favorite soup! I will try yours as well….it looks very good too!
