Easter Bunny Cupcakes with Marshmallow Ears… OMGoodness. Are these cute or what? My daughter-in-law (and TPOT contributor) Shandi made these darling cupcakes.
Best of all, these are really easy to make (i.e., even I could make them). I love finding a recipe that looks like it took a ton of time and effort but really didn’t. My kind of dessert!
Of course, Shandi made these cupcakes from scratch. But honestly, you could by boxed cake mix or simply purchase pre-made cupcakes from your local grocery bakery and make it even easier! If you want them to look like these, you’ll need to go the boxed-cake-mix route. Once you finish mixing it all together, divide the batter into three batches and add a bit of food coloring to each batch.
To make the cupcake “grass,” add green food coloring to part of your frosting and use the Wilton Decorating Tip 233.
Once you’ve got your cupcakes frosted, it’s time for the fun part… bunny ears!
You’ll need pink sprinkles and a bag of large marshmallows. Pour the sprinkles on a small plate. Cut the marshmallows in half diagonally with scissors and immediately dip the sticky inside of the marshmallow into the sprinkles. Top each cupcake with a pair of ears and you’re done!
