This fresh and healthy guacamole recipe is delicious as well as quick and easy to make!
What better way to celebrate Cinco de Mayo than with fresh and healthy guacamole and an ice cold Corona? Living in San Antonio for 13 years gave me ample opportunities to taste some of the best guacamole you’ll ever find (my favorite is the tableside guacamole at Sazo’s at the San Antonio Marriott Rivercenter). I’ve spend years perfecting my own version to share with you today!
This year I’m subbing in a super healthy alternative to tortilla chips. It’s my new food obsession… plantain chips! They are crisp and salty and I don’t even miss the real thing. These chips are roasted with palm oil and salt, making them gluten free and paleo friendly.
This recipe is super quick to make and it’s oh-so-goooooood with chips or fajitas or omelettes, to name just a few possibilities!
Here’s all you need to create my version of guac that’s full of flavor and spice: Avocados, red onion, green onion, tomatoes, serrano pepper, lime, cilantro, and salt. The secret to this yummy guacamole recipe is the lime and cilantro.
- 2 ripe avocados
- 3 tablespoons finely chopped red onion
- 1 tablespoon chopped chives
- 1 lime, juiced
- 1 tablespoon finely chopped serrano pepper (more or less depending on your spice tolerance!)
- 2 tablespoons cilantro, coarsely chopped
- 2 tablespoons tomatoes, chopped
- Sea salt
- Cut the avocados in half lengthwise.
- Remove the pit and discard.
- Remove the avocado from the skin and place the avocado flesh into a bowl.
- Add the lime juice, red onion, chives, serrano, cilantro, tomatoes, and salt.
- Mash with a fork until half smooth and creamy, leaving some chunkier pieces intact.
- Taste and add more salt or serrano pepper if desired.
