These Meringue Cookies are perfect for that special someone on Valentine’s Day!
I heart Valentine’s Day. I really do! Maybe one reason is that my handsome husband loves to make me feel extra special that day. He’s a hopeless romantic! For instance… the trip we just took to Hawaii… he surprised me with that for Christmas AND planned out every single lovely detail. He’s just like that!
So with this special holiday coming up pretty soon, I’m sharing this recipe from the AWESOME Shandi Tabler (who is officially a regular contributor to Tabler Party of Two!). Wouldn’t these pretty little cookies be perfect for Valentine’s Day? Or a baby shower? Or a bridal shower? Any special occasion, really!
This recipe is for cookies with three different shapes. To create the rosette and star cookies, you’ll need to use the Wilton 1M Star Tip. For the “kisses” cookies, use the Wilton 1A Round Tip. To create the rosette cookies, start in the center and work (pipe) your way outward in a growing circle. For the star and kisses cookies, just squeeze the bag for a count of two.
To create your three colors, simply divide your meringue into three batches. Leave one of them white. Then use Wilton Gel Food Color to make the other two a light pink and a darker pink. To make cookies that are both pink and white, use a spatula to put a thin layer of white meringue in the bag. Then fill the rest of the bag with pink meringue.
- 2 large egg whites or 1/4 cup egg whites
- 1/4 tsp cream of tartar
- 1/4 cup + 1/2 tbsp granulated white sugar
- 1/2 cup lightly spooned powdered sugar
- pink gel food coloring
- Preheat oven to 200 F and place a piece of parchment paper on a cookie baking sheet
- Whisk egg whites in a bowl until frothy
- Add cream of tartar and beat until soft peaks form
- Slowly add the granulated sugar and whisk until the meringue reaches stiff peaks
- Fold in the powdered sugar
- Place the meringue in a piping bag with the tip of choice and pipe on to the baking sheet
- Divide the meringue into 3 sections
- Color one section dark pink, the second light pink and do not color the third section
- Bake for 1 hour
