I adore summer grilling! Partially to keep the heat out of the kitchen, but mostly because I love the flavor of anything grilled. Especially steak! My favorite to throw on the grill is flank steak because it is leaner than many other steaks. And since I’m a huge fan of South American and Latin food, I chose to make a chimichurri sauce to accompany the grilled flank steak.
Chimichurri sauce originated in Argentina, and its flavors perfectly complement grilled flank steak. The sauce can be prepared well in advance and refrigerated for several days. In fact, the longer chimichurri sauce is allowed to set, the greater the flavor, as the ingredients mingle.
The ingredients in my chimichurri sauce are cilantro, parsley, garlic, red onion, olive oil, apple cider vinegar, red pepper flakes, sea salt, and black pepper. I just tossed all the ingredients in my Nutribullet and pulsed a few times.
I prepared the steak with a rub. (Note one of Tom’s prized possessions… the New England Patriots Sportula!) That’s all the prep work required.
- FOR CHIMICHURRI SAUCE
- 1 cup parsley, finely chopped
- 1 cup chopped cilantro
- 2 tbsp red onion, finely chopped
- 1 clove garlic, minced
- 1/3 cup extra virgin olive oil
- 1/4 cup apple cider vinegar
- 1/4 tsp kosher salt
- 1/8 tsp fresh black pepper
- 1/8 tsp crushed red pepper flakes, or more to taste
- FOR FLANK STEAK
- 1 1/2 pounds flank steak
- 1 tsp garlic powder
- 3/4 tsp ground cumin
- 1/2 tsp dried oregano
- 1/4 tsp fresh ground pepper
- 1 1/2 tsp sea salt
- For the chimichurri, place all ingredients in a Nutribullet or food processor and pulse until smooth and combined.
- In a small bowl combine the cumin, oregano, garlic powder, freshly ground pepper and sea salt. Rub both sides of the steak with the spices.
- Prepare the grill on high heat.
- Grill the steaks 4 to 5 minutes per side for medium-rare.
- Place steak onto cutting board.
- Cover with foil and let it sit for 5 minutes.
- Thinly slice steak against the grain.
- Serve with chimichurri sauce.
I served the steak with grilled vegetables. (The chimichurri sauce was supper yummy on the veggies!) This steak is also excellent with corn on the cob and a green salad!
