This Louisiana girl LOVES jambalaya! In fact, back when I was living in my very first apartment at SMU, jambalaya was the first recipe I learned to cook for friends. Adored it back then, adore it even more now! But given that it’s, oh about 110 outside these days in Southern California, I prefer to cook out side whenever possible.
Enter my new fave recipe: Grilled Jambalaya!
The images above show you all the easy steps involved. Chop up all the veggies and sausage, shred the chicken, add just a little olive oil, parsley, garlic and spices, mix it all together with the shrimp and place in individual foil packets. Typically I used fresh, medium shrimp because, well they are just tastier. But I found this big bag of frozen salad shrimp on sale for 99 cents, so I decided to use those this time. Seriously… 99 cents!
Okay, here’s how ya make grilled jambalaya…
- 8 oz. andouille sausage, cut diagonally into ½" thick slices
- 1 cup rotisserie chicken, shredded (or cooked chicken breasts)
- 1 cup onion, diced
- 1 cup red bell pepper, chopped
- ⅔ cup celery, thinly sliced
- ⅔ cup grape tomatoes, halved
- ⅔ cup frozen, sliced okra
- 2 Tbsp. minced garlic
- 2 Tbsp. olive oil
- 2 Tbsp. chopped fresh parsley
- ¾ lb. peeled, and cleaned shrimp
- 1 Tbsp. olive oil
- 2 tsp. paprika
- ¼ tsp. Tabasco sauce
- 2 Tbsp. butter, cold and cubed
- salt and pepper
- hot cooked rice (I prefer brown)
- Preheat grill to medium
- Toss the sausage, chicken, vegetables, garlic, 2 Tbsp. olive oil, parsley, salt, and pepper together in a medium bowl
- Set aside
- Combine the shrimp with 1 Tbsp. olive oil, Tabasco sauce, salt, and pepper
- Set aside
- Lay 4 pieces of 18x18 inch aluminum foil on a flat surface
- Divide the sausage and vegetable mixture up between the 4 foil pieces
- Top each pile with a fourth of the shrimp. Place 3 cubes of butter on top of the shrimp
- Fold each piece of foil over the jambalaya so that the edges meet, then crimp the edges tightly to seal the packets well
- Place the packets on the grill and cook for 8-10 minutes, until puffed
- Remove them from the grill and let them sit for 2-3 minutes before opening
- Carefully open the packets and spoon the jambalaya over cooked rice
- ENJOY!
- I ended up making 6 packets instead of 4 when I cooked this week. It was the perfect portion with a side of salad.
Honestly, I think I could eat this once a week! Hope you enjoy as much as my cute husband and I did!

This looks amazing and I had no idea you could cook jambalaya on the grill. I guess just about anything can be grilled right?
