I’m thrilled that Ragu asked me to share my Healthy Lasagna Rollups with you today!
I’m a Louisiana girl. And believe you me, folks from the Bayou State LOVE homestyle cookin’. Now I love homestyle cooking as much as the next southern gal. What I’m NOT so fond of is the calories that lurk within most homestyle recipes.
So I work hard to find ways to update some of my favorite meal traditions in a way that is healthy and delicious! Homestyle Ragu Pasta Sauce makes whipping up some of my favorite pasta dishes quick and easy!
This Lasagna Rollup recipe is healthier than the lasagna I grew up on because it makes portion control super easy! One lasagna roll with a nutritious green salad is just the right amount of food for dinner. The Ragu Homestyle Sauce contains NO artificial flavors, artificial colors, or high-fructose corn syrup. Plus, the fact that I use low-fat ricotta cheese and that the lasagna is filled with artichoke hearts, mushrooms and olives (instead of Italian sausage) makes this dish a guilt-free version of one of my old favorites.
I was able to make this meal in less than an hour, and it made enough for plenty of leftovers.
Making this dish really is simple. First, I cooked the lasagna noodles. Then I mixed the artichoke hearts, mushrooms, and olives together with the ricotta and parmesan cheese to save a few steps in the process. Keep reading for step-by-step instructions.
- 9 lasagna noodles, cooked
- 14 oz can of artichoke hearts, chopped
- 12.25 oz can of mushroom stems and pieces, chopped
- 6 oz can of sliced black olives
- 15 oz low-fat ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- salt and fresh pepper
- 23 oz jar of Traditional Ragu Homestyle Pasta Sauce
- 9 tbsp part skim mozzarella cheese, shredded
- Preheat oven to 350°.
- In a medium bowl, combine artichokes, mushrooms, olives, ricotta, Parmesan, egg, salt and pepper.
- Spoon about one cup sauce on the bottom of a 9 x 12 baking dish.
- Place a piece of wax or parchment paper on the counter and lay out lasagna noodles.
- Make sure noodles are dry.
- Spread about 4 TBS of ricotta mixture evenly over noodle.
- Carefully roll and place seam side down onto the baking dish.
- Repeat with remaining lasagna noodles.
- Spoon sauce over the noodles in the baking dish and top each one with 1 tbsp mozzarella cheese. Put foil over baking dish and bake for 40 minutes, or until cheese melts.
- Makes nine lasagna rollups.
- To serve, ladle a little sauce on the plate and top with lasagna roll.
- If your family loves pasta with LOTS of sauce, you might want to use 1 1/2 or 2 jars of pasta sauce.
- Also, feel free to substitute any veggies of your choice in the filling.

I love the artichoke filling for your lasagna roll ups! I typically prefer vegetable-filled options as well, but since my 13 month old is currently iron deficient, we’re supposed to feed him as much red meat as possible right now. I used the Ragu homestyle sauce to make sausage lasagna cups — similar idea to yours, but not nearly as healthy. 😉 Great recipe!
