Spicy, Grilled, Watermelon, Jicama, and Cucumber Salad

I’m such a salad fan. Especially salads that are different. Today’s recipe certainly fits the bill! Spicy, Grilled, Watermelon, Jicama and Cucumber Salad. It’s the perfect blend of sweet, spicy and refreshing for summer. And Lord knows, I certainly need refreshing during the day here in the desert. We see triple digits before 9:30 a.m. many days in the summer! INGREDIENTS Salad: 1 seedless watermelon olive oil  1 cup jicama, peeled and diced 1 cup cucumber, thinly sliced 1/2 cup {Read More}

God’s Guidance for Difficult Days

You know the kind of day I’m referring to. You wake up and just feel “off,” or blue. Or it might be a day that starts out extremely ordinary, but a sequence of events changes everything. It’s so easy to lose perspective on those difficult days. I’m a praying kind of woman, but prayer sometimes doesn’t come naturally in the midst of difficulties. I’m more likely to stew over my circumstances or try to fix the “un-fixable” on my own. {Read More}

S’mores Bites – Betcha Can’t Eat Just One!

I love to eat s’mores WAY more often than I have the opportunity to actually make them over a fire. Thanks to this little recipe, I can have s’mores bites anytime I wish! INGREDIENTS 7 whole graham crackers, finely crushed (equals one cup) 1/4 cup powdered sugar 6 tablespoons butter, {Read More}

The Bucket List

  Tom and I recently learned that our beloved, 11-year-old Cairn Terrier, Pumbaa, has cancer. It’s really not treatable because it’s in his nasal passage and has already spread into the bone. We are simply devastated. Pumbaa is the perky, cheerful, adventurous peacekeeper of the Tabler family. He’s also fearless and would go after a dog three or four times his size to “protect” us. He is ever patient with his brother, Rowdie, and all his silly antics. He has even allowed {Read More}

Watermelon Mango Pico de Gallo

Watermelon Mango Pico de Gallo is the perfect blend refreshing, spicy, sweetness on a hot summer day! I bought a couple of personal, seedless watermelons over the weekend and, by yesterday, hadn’t cut into them yet. I wanted to do something a bit different than usual and settled upon apico degallo for one of them (another yummy watermelon recipe is coming soon!) Watermelon, mango, jalapeño, red onion, cilantro, lime juice, and salt. Doesn’t it sound simply mouth-watering? It’s so flavorful {Read More}
