I tasted my first bite of street corn at my favorite taco join in south Texas, Torchy’s. (Do I daydream about Torchy’s coming to California? Why, yes, I do!) I knew immediately I must learn to make it. Here’s my version of Mexican Street Corn. It really is insanely delicious!
I’m not sure what makes this dish so irresistible. I think it’s the combination of everything! The juicy grilled corn, chili power, cilantro and creamy cotija cheese all come together in to create an amazing flavor.
Back when I first made my own street corn, there was one part of the recipe that prevented me from preparing the dish as often as I wanted. Street corn starts with grilled corn. And let’s face it… no one has time during a busy work week to be grilling corn. Then, I discovered a whole bag of frozen grilled corn at Trader Joe’s. Simply GENIUS!
If you don’t live near a Trader Joe’s, not to worry. You can either grill your corn, or you can toast it in a cast iron skilled to get the same effect. Okay, here’s how you make this!
- 1 lb. grilled corn
- 2 tbs mayonnaise (I used mayo with olive olive)
- 3 tbs cotija cheese
- garnish with chili powder and cilantro
- Preheat oven to 350
- Combine corn, mayo and cotija
- Place in casserole dish or cast iron skillet
- Bake for 15 minutes or until heated through
- Easily double or triple this recipe to ensure you have leftovers!
