July 4th Cocktail: Berry Coconut Spritz

Every holiday deserves a specialty drink, don’t ya think? Of course! So I have for you today the perfect July 4th cocktail, a Berry Coconut Spritz. AND… just because I like special little touches when I entertain, I even made a sign announcing to your family and friends that you have a specialty cocktail available. You can print it out for free!

Yes, it has coconut rum… Malibu, to be exact. I think everything tastes better with a little Malibu! Okay… here’s how you make it.

INGREDIENTS
1/2 cup blueberries
1/2 raspberries
3 tablespoons lemon juice
1/2 cup coconut rum
2 1/2 cups ginger ale
coconut flakes (optional garnish)

DIRECTIONS
Muddle the blueberries and raspberries in a pitcher.
Add the lemon juice and coconut rum.
Stir until well combined. 
Add the ginger ale and gently stir until combined.
Garnish rims of glasses with coconut flakes (optional).
Fill glasses with ice and add Berry Coconut Spritz.

Note: If you don’t like any texture in your drink, skip muddling the raspberries and add them with the ginger ale. Also, I had no luck garnishing with regular sweetened coconut flakes. They didn’t stick to the glass. I had some unsweetened coconut flakes (which are shredded more finely), and they worked perfectly!
