I can remember when growing up that we would make roasted pumpkin seeds after we carved our jack-o-lanterns. I also remember it was a lot of work, but that we loved them! So this week, after gutting my pie pumpkins and making homemade pumpkin puree, I decided to treat Tom and me to the yummy seasonal treat of roasted pumpkin seeds! I was surprised at how interested my dear husband was in this little project!
Before roasting, you do need to take some time to rinse the pumpkin chunks and stringy stuff off the seeds. It’s tedious work but worth it in the end.
The best way to accomplish this little feat is to put the seeds in a bowl with water. They float to the top!
I kept rinsing and switching from bowl to colander and back until most of the pulpy stuff was gone.
Next I put the seeds in a pot of water, brought it to a boil, and then lowered heat and simmered for 10 minutes.
While the seeds were simmering, I preheated the oven to 325. Next I put the seeds back in the colander and patted them dry with a paper towel. The little stinkers like to stick to the towel, but they are easy to pluck or shake off. Get them as dry as you can. You can even let them sit for a couple of hours, but I did not. I spread them out on a baking sheet, sprinkled about a teaspoon of olive oil on them, and massaged the oil into the seeds.
Then I LIBERALLY sprinkled salt all over them. Next they went into the oven, where they roasted for about 30 minutes. Every 8-10 minutes I stirred them around. The husband told me to add more salt so I did. And then they were done!
I had to grab the camera quickly before Tommy started devouring them!
Perfectly crunchy, salty, tasty, addictive roasted pumpkin seeds.
Tommy then decided to try the little game we call “I wonder if the pups will like ________?”
It’s our boys’ favorite game!
Do they like pepitas?
Why, YES, they DO like pepitas!
Pumbaa is even “sitting pretty,” politely asking for more. Rowdie, on the other hand, doesn’t know how to do this or any tricks at all.
Well, friends, it’s official. All the Tablers love roasted pumpkin seeds! You will, too. We promise. And if you manage not to eat them all immediately, save some for this yummy salad recipe!

I love roasted pumpkin seeds! I,too, roast them every year after carving our jack-o-lanterns. This last year I roasted two batches: one with cinnamon and sugar and another with smoked paprika and salt. Delish, although olive oil and salt is my standby favorite. I’ve never thought of boiling them first in water- can I ask? What is the purpose?
Tacy, I know I would love the cinnamon sugar and the paprika versions! I boiled them because I read somewhere that it helps make them crispier. I also read that sugar pie pumpkins are better for roasting, but I’m not sure about that! All I know is these are good. 🙂
