Oh, zoodles, how I love you! Yes. Really, I do.
Lately I’ve been a bit lazy about pulling out my spiralizer. However, yesterday reminded me of just how much time it takes. Which is barely any!
Honestly, the time it takes you wash the zucchini, get out the spiralizer, and spiralize your perfect zucchini noodles is less than five minutes!
No longer will I be lazy because I like zoodles as much as I do pasta. I’m not sure how that works. It’s counterintuitive… zucchini compared to yummy pasta? But you’ll just have to trust me on this. Eating zoodles seems like eating the real deal. Maybe it’s because I’m all about the sauce anyway? Perhaps.
The other half of Tabler Party of Two would say he much prefers pasta. BUT… he does like zoodles, too.
Last night I whipped up this dish with some veggies and leftover grilled chicken I had on hand. Pesto Zucchini Pasta with Chicken, Tomatoes, Mushrooms & Olives.
It turned out exquisitely delish!
- 1 tbs olive oil
- 1 clove minced garlic
- 1 cup sliced shiitake mushrooms
- 4 cups zucchini noodles (about 1-2 large zucchini)
- 1 cup sliced cherry or grape tomatoes
- 1/2 cup sliced kalamata olives
- 1 clove garlic
- 1/2 cup chicken broth
- 3 tbs prepared pesto sauce
- 1 cup cooked, cubed chicken breast
- Pinch of red pepper
- Salt and pepper to taste
- Feta cheese and chopped green onion for garnish
- Using spiralizer, make zucchini noodles
- Heat olive oil in a large skillet
- Sauté mushrooms and tomatoes for about two minutes
- Add garlic, olives and chicken breast and sauté for two more minutes
- Add chicken broth and pesto; mix well with sautéed ingredients
- Add zucchini noodles and combine thoroughly
- Serve hot and garnish with feta cheese and green onion

And this device can spiralize far more than zucchini! You can use the spiralizer to make noodles out of carrots, squash, beets and more. You can also use it make onion rings or potato rings for fries.

I’m with your other half, I would definitely prefer the pasta, so, no offense, but I would probably switch out the zucchini for the pasta, but I still find this recipe amazing! Thanks for sharing!
I love zoodles too! I’ve just recently gotten addicted to the spriralizer and I love how it really does imitate noodles! And this chicken-tomato-mushroom version — swoon! Sounds great!
