Though it is cold and dreary in most parts of the U.S. this winter, I have a Pineapple Mojito recipe that will transport you to a tropical paradise with just one sip! And who doesn’t want a taste of THAT in the middle of a freezing-cold, crazy-hectic work week? (okay… so it’s not really freezing cold where I live. But chances are it is where you live!)
Sip this mojito made with Pure Earth juice™ and the winter doldrums will fade away… glimpses of tropical warmth with take their place. Really! Some tastes just do that, don’t they?
Ever since I tasted my first mojito, I’ve been hooked. I’m always trying to find new varieties of this favorite cocktail of mine. To date, I’ve made all kinds of mojito variations. So when Del Monte asked me to write a story about their Pure Earth juice™, I knew exactly what I would make. What could be better than combining the minty-lime-rum hallmarks of the mojito with juice from fresh-picked pineapples? So without further adieu, the Pineapple Mojito!
- 1 cup Pure Earth Pineapple Juice
- 1 cup canned crushed pineapple
- 1 cup light rum
- 1 bunch fresh mint, stems discarded
- 2 limes, each cut into 8 wedges
- 1/2 cup sugar
- 4 cups ice cubes
- 1 cup club soda
- In each of eight highball glasses, muddle together one-eighth of the mint leaves, two lime wedges, and one tablespoon sugar. Stir in two tablespoons Pure Earth Pineapple Juice, two tablespoons crushed pineapple and two tablespoons rum until the sugar is dissolved. Add 1/2 cup ice cubes and a splash of club soda to each glass. Stire and serve immediately.
I love the fresh and natural taste of the Pure Earth juice™ with the other flavors in this recipe. And of course I served this delicious drink in my cute mojito glasses Tom bought for me a few years ago.
Pure Earth juice™ also comes in three juice blend flavors that are just as awesome as the pineapple juice. But don’t look for it in the juice aisle. You’ll find it in a refrigerated section. My grocery store actually had it refrigerated in the produce section. It’s so delicious and convenient that I’ll be adding it to healthy smoothies in the mornings.
