Do you miss eating pasta dishes like I do? Perhaps you don’t eat it for dietary/health/weight-control reasons. But you MISS it! Well, I have really good news for you. It’s called SPIRALIZING! What, you may ask, is that?
Well, it’s the simple art of creating noodles out of zucchini and other vegetables with an inexpensive gadget! Before you decide this sounds a bit crazy and, perhaps, yucky, stick with me for just a minute! It’s really worth learning about. I bought my Paderno World Cuisine Tri-blade Vegetable Slicer about three months ago (you can get it at Amazon or Williams and Sonoma), and my family is finally enjoying our favorite pasta recipes again. My husband is quite particular about his pasta, but he LOVES the dishes I’m making! The noodles take just moments to make, and they taste amazing.
So… to get you started, here’s my Scallop, Tomato & Basil Zucchini Pasta Recipe.
Start with some nice, thick zucchini and position on the spiralizer to make your noodles.
Just pick your “pasta” width and turn the handle. So simple!
And you end up with a beautiful plate of zoodles.
Next, saute your scallops in coconut oil, about 3 minutes on each side. Remove and keep warm. Add garlic to your pan and cook 15 seconds. Then add tomato, capers, olives, basil and salt.
Cook for a few minutes and then add the raw zucchini noodles for a minute. Finally, add the scallops back in. Drizzle with olive oil. Serve hot!
INGREDIENTS
3-4 zucchini
1.5 lb scallops
1 tsp coconut oil
1 garlic clove, minced
12 grape tomatoes, cut in 1/2
1/2 cup Kalamata olives
4 TBS basil
3 TBS capers
1/4 sea salt
1 TBS olive oil
