I’m trying to follow the paleo diet. And for the most part, I really enjoy it! I love meat, vegetables, eggs, nuts and fruit. But I do miss the crunch of crackers. Especially when the husband breaks out his cracker du jour after work (Carrs, Triscuits, Wheat Thins… all weaknesses of mine). I decided to create a cracker I can enjoy, guilt free! And so my Spicy Paleo Crackers recipe was born. They turned out quite tasty and fulfilling! Plus they were really easy to make. Keep in mind that you could substitute an herb or another spice if you prefer. Hope you enjoy as much as I do!
Ingredients
2 cups almond meal (I like Trader Joe’s)
1/2 teaspoon sea salt
1 tablespoon crushed red pepper
1 egg white or 2 tablespoons of egg whites from carton
2 tablespoons water
1 tablespoon olive oil
1/4 teaspoon coconut oil
Instructions
Preheat oven to 350.
Combine almond meal, salt and red pepper in a medium mixing bowl. In another bowl, whisk together the egg white, water, olive oil and melted coconut oil.
Then, pour the wet ingredients into the dry mixture. Stir until all dry ingredients are moist and a stiff dough forms. (If you need more liquid to get the dry ingredients moist, add a little more water or olive oil).
Next, place the dough between 2 sheets of parchment paper and roll out to an even thickness. About 1/8 an inch is good.
Transfer the parchment to a baking sheet and remove the top piece of parchment. Use a pizza cutter to trim off edges of the dough, then cut the dough into cracker-size pieces. Bake for 10 minutes. Turn oven off and let the crackers sit for another 10 minutes.
Cool and enjoy!

Just made your Paleo crackers. I’ve been missing crackers too and these were great. I sprinkled them with savory spice shop white onion, minced.
