One of the things I miss most about South Texas is the amazing Mexican food. Really… There’s nothing quite like it! I got a hankering for some good quesadillas this week and created a meal that reminded me of a dish I could find in San Antonio. Creamy Chicken Quesadillas!
I made these with my favorite new appliance, the Cuisinart Griddler grill and panini maker. (Honestly we use this gadget practically daily!) To whip up this dish, I combined cream cheese with green chilis, added some chicken and mexican cheese blend, and topped it off with some cilantro and avocado. YUM!
One of the secrets of making this so tasty is to lightly brush a bit of oil on the corn tortillas. This adds a bit of texture and crunch when you take your first bite!
- 6 ounces cream cheese, slightly softened
- 1 small can diced green chilis
- 2 cups rotisserie chicken, shredded
- 1.5 cups shredded mexican cheese blend
- 8-10 corn tortillas
- 1 avocado, for garnish
- Cilantro, for garnish
- Preheat Griddler using smooth cooking plates (or warm a skillet instead)
- Combine cream cheese and green chilis
- Lightly brush the tortillas with oil
- Spread cream cheese mixture on top of half the tortillas
- Top with chicken and mexican cheese
- Top each tortilla with a second tortilla
- In batches, place quesadillas on Griddler and close lid
- Grill for 3-5 minutes, until cheese is bubbly
- Add avocado and cilantro as garnish and serve with salsa if desired
I served these with some of my homemade salsa. The hubs and I both loved this meal!
