Tom and I are closing in on the end of week three of the Paleo Challenge. I have to be honest… I’m loving it! Surprisingly, I really haven’t felt deprived. But Tom has a little bit. Gotta make my man happy, so today I’ve made him a little treat. Walnut coconut cocoa bites. AND best of all, this treat is paleo approved! Even though it is approved, it is not highly recommended to eat many during the challenge because of the fruit sugar content. But they are fine for a little treat every now and then. And they are full of protein, healthy fat, and fiber!
These healthy little balls of sweet goodness took only 30 minutes to make Only four ingredients are needed: medjool dates, unsweetened coconut flakes, walnuts, and unsweetened cocoa powder. You can use other nuts instead of walnuts if you prefer.
You just throw all that into a food processor and pulse until finely chopped.
Roll them into balls and refrigerate or freeze. They are simply amazing. Mostly because they don’t feel like a “pretend” treat. They really are a treat!
- 1 1/2 cups pitted medjool dates
- 1 1/2 cups walnuts
- 1 cup unsweetened coconut flakes
- 4 Tbs unsweetened cocoa powder
- Place all ingredients into food processor. Pulse until finely chopped, then pulse some more.
- Roll into bite-sized balls.
- Refrigerate or freeze.
