Watermelon Mango Pico de Gallo is the perfect blend refreshing, spicy, sweetness on a hot summer day!
I bought a couple of personal, seedless watermelons over the weekend and, by yesterday, hadn’t cut into them yet. I wanted to do something a bit different than usual and settled upon apico degallo for one of them (another yummy watermelon recipe is coming soon!) Watermelon, mango, jalapeño, red onion, cilantro, lime juice, and salt. Doesn’t it sound simply mouth-watering? It’s so flavorful that it’s really addicting! Plus it takes only about 10 minutes to make.
This pico is perfect on chips, or grilled fish, or jerk chicken… or even just a spoon! It’s just so fresh and colorful and healthy, too. Plus, in my opinion, it gets bonus points just for being gorgeous. Especially if served on blue corn chips.
- 2 cups seedless watermelon, diced
- 1 cup mango, diced
- 1 jalapeño, seeded and finely chopped
- 1/4 cup red onion, diced
- 2 tablespoons fresh cilantro leaves, chopped
- 1 lime, juiced
- 1/2 teaspoon salt, or more to taste
- In a large bowl, combine watermelon, mango, jalapeño, onion, cilantro, lime juice. Add salt to taste. Enjoy!
- Perfect with chips, grilled fish or chicken, or as a side salad!

Oh yes! Watermelon and mango- genius! I’m not so sure about the jalapeno, though.
